mozzarella toasts with basil, tomatoes and anchovies

Anchovies are one of my favourite things. Perhaps because of the intense saltiness, I love to eat them straight out of the jar. I add them to sauces becuase they melt away leaving behind a fabulous flavour.
Did you know that anchovies are the main flavour component of Worcestershire sauce?
I wanted to eat these delicious Mediterranean Delicacies anchovies in a way where I could fully appreciate them. I made these open toasted sandwiches by simply toasting slices of baguette, covering the other side with Mozzarella and placing them under a hot grill until the cheese had melted. I then topped them with vine ripened cherry tomatoes which I had halved and tossed with some MD Basil Pesto and an anchovy fillet. With just salt, pepper, a drizzle of balsamic, a few rocket leaves and capers, this made a delectable snack.
